No More Grains :(

So I have been filling very Nasues and not myself for the last couple of weeks. My cousin who is a Chiropractor came into to town and long story short we discovered that I have a grain intolerance. So all I can now have our potatoes and Quinoa is fine. I can still also have fruits, veggies, beans, light meat, light corn flour and light dairy.

The recipes on here will be changing soon! This has been a little difficult getting use to. I am only on my third day and I still have cravings like pizza and tortillas. I am sure that if this makes me feel better in the long run then it will be easier to fallow.

Spicy Tortellini & Spinach Bake

This is so easy and you can make it as mild or hot as you like!

WHAT YOU NEED:
Sauce pan, pot, spoon, garlic mincer (or you can cut them by hand with a knife), lemon zestier, whisk

INGREDIENTS:
12oz of Spinach and Cheese or Cheese Tortellini (there is a frozen brand at Target that is good at cheaper)
1/2 Tablespoon Olive Oil
3 Cloves of Garlic
2 Tablespoons Whole Wheat Flour
2 Cups Milk (of your choice I use 1% Organic)
1/2 Teaspoon Sea Salt
1/2 Teaspoon Ground Pepper
1 1/2 Teaspoons Dry Basil
1/2 Teaspoon Dry Pepper Flakes (this is where the heat comes in you can make it more or less I use 1 Tbs.)
1 Small Lemon (optional)
3 to 4 Cups Fresh Spinach
1/2 Cup of Parmesan Cheese

DIRECTIONS:
In pot boil 3 Cups water. Add Tortellini and prepare as on package. Mince garlic cloves. In sauce pan poor in olive oil then add Garlic. Saute for about 1 minute. Then add milk let come to a light simmer about 2 minutes. Add in flour and whisk together ingredients till no more lumps about 1 minute. Add salt, pepper, basil, and pepper flakes. Continue stiring till sauce is thick ( to know when it is done, if it coats your spoon).

Add in tortellini and and spinach till combined. Cut lemon in half and squeeze out juice into pan and zest onside into pan. Add cheese if you like mix well together.

Moving

I am so sorry for slacking on my post I am in the middle of literally moving me and my husband across the country. We will be settling in Georgia in March so things should be getting better from there plus I will have a bigger kitchen and more fresh produce there! Very exciting!! I am sorry for the lack of advice and recipes but I promise that I will make up for it in March but mostly April!!! Thank you everyone for your love and support you are all so amazing!!!

Find CERTIFIED Healers

Doctors, Nutritionist, Message Therapist, Chiropractors, Dietitians, Life Coaches, Health Coaches, Acupuncturists, Therapists, Physical Therapists, etc.

If you are struggling in your life and need help I strongly erg you to go and see a certified person that can help you. Now a days with the internet anyone can post anything... It does not always mean that they can help you.. In fact they can even make you worse. Our minds and bodies are a very delicate thing!

"One mans cure is another mans poison". This is very true. We are all made differently, we all have different digestive tracks, blood types, ancestries,and metabolisms. All of these are factors in how we take in foods. Depending on our Bio Individuality there are foods to avoid and foods we need more of but it depends on each individual. So if you ask Bob how did you lose the weight and he says by eating more protein and less carbohydrates does not mean that is the best diet plan for you. You can have kidney failure, raise of LDL levels (bad cholesterol), and more! If you would like to have a specified diet plan that you can lose weight in a healthy way for your body and still eat foods you enjoy go to a specialist! In fact I can do that!! If you are struggling with depression family support is an amazing thing. For more help and to make sure you are completely taken care of in a Healthy manor please go to a Therapist, Psychiatrist, or a Councilor that is certified and can help with depression or whatever mental or emotional issues you are struggling with.

If you are very ill and not getting better please go to the Doctor. Yes it can be a pan to pay for the doctor but they are Doctors they know how to help you and make sure that you are taken care of. Your health is not something to take lightly.

If you are having back problems and your brother keeps popping it and it is not getting better. Go to a Chiropractor. They are Doctors as well and you may think it is your back but there could be something else like your hip. They can find the cause of the problem and take care of you and eliminate your pain.


I could go on with this forever but my point is this. These people all went to school for a specific reason they all have their place in the world and can help you! Ya, free is nice but do you really want to play Russian Rullet with your well being. It is really that critical! What we eat, how we feel, how our bodies feel are very critical things so please go to a specialist and someone who is certified and can help you in a healthy manner. Now there maybe specialists you do not like or feel comfortable with. There are many of us out there! Find who you feel comfortable with and you feel can truly help you! Do not worry about feeling all of us got into this healing world to help and heal others and that is what matters most to us is how you feel and your health.

Lemon Pasta

This is a little different than anything I have ever put on here...

WHAT YOU NEED: Pot, knife, zestier, sauce pan, and tangs or a spoon

INGREDIENTS:
8oz Whole Wheat Pasta Noodles
2 Tablespoons Non Salted Butter
1/3 Cup Mozzarella Cheese
2 Teaspoons freshly cracked Pepper
1 Tablespoon Olive Oil
1 Tablespoon freshly minced Garlic
1/2 Teaspoon Italian Seasoning
1/2 Teaspoon Parsley
2 Teaspoons freshly zest  Lemon

DIRECTIONS:
Fill Pot with water and let come to a boil then add in noodles and let cook. Pull them out slightly early so they are not cooked all the way about 2 minutes less than suggested on the box. Drain noodles but save 1/3 cup of hot water for later.

In Saucepan place noodles, butter, and water. Toss with Tangs. Once butter is melted add in cheese and let melt. Then add pepper, garlic, Italian seasoning, parsley, and lemon. Toss tell well combined. If noodles are a little sticky or dry add in Olive Oil. May take more or less than suggested. You want your noodles creamy not soggy.

ENJOY!

I find this Pasta to be very  flavor full and filling, so I like to start with a small portion then fill up the rest of my plate with salad and/or an assortment of veggies. After clearing my plate if I am still hungry I will do the same have a little more pasta and lots of veggies!

Vegetable Lasagna

If you are like me and do not like the grease that meat makes this is a great alternative and just as Delicious! 

What you need: Cheese grader, 2 Bowls, Pot, Spoon, Measuring Cups and Spoons, Strainer, 8" or 9" Baking Pan

Ingredients:
1 Medium Zucchini
2 Cups Marinara Sauce
1(10oz) Package of frozen Spinach thawed
1 1/2 Cups Cottage Cheese (of your choice) or (12oz) Ricotta Cheese
1/3 Cup grated Parmesan Cheese
2 Tablespoon Fresh or 1 1/2 Teaspoons Dried Oregano
(4oz) about 5 Mushrooms chopped
1 Package Dried Lasagna Noodles (you only need 8 noodles)
1 Cup Mozzarella Cheese

Directions:
Poor water into pot, bring to a boil and place Lasagna noodles inside. Let cook then drain.
Using cheese grader shred up the Zucchini then mix with Marinara in bowl.
Drain thawed spinach in a strainer then squeeze out extra moister by using a clean kitchen towel or a paper towel (I like to just use my hands to squeeze it out). 
 Mix the Spinach, Mushrooms, Cottage Cheese, Parmesan Cheese and Oregano in separate bowl.

Coat baking pan with 1/2 Cup  of Marinara mixture. Then lay two Lasagna noodles on top of sauce. Add a couple of Tablespoons of Spinach and Cheese mixture. Spread evenly then poor 2 Tablespoons of Marinara sauce over noodles and sprinkle 1 Tablespoon of Mozzarella cheese.
Repeat Layering 3 more times beginning with 2 more noodles. On last top layer add remaining Mozzarella.

Cover with plastic wrap and then aluminum foil. refrigerate up to 24 hours.
Heat oven to 400 Degrees Fahrenheit. Remove plastic Wrap then place Aluminum foil on top of pan and bake for 45 Minutes. Remove foil and add 10 more minutes to time. You want Marinara to be bubbling along the edges. Remove from oven and let stand for 10 minutes.

ENJOY!!!! 


 This can be a little bit of a confusing recipe... on the top was the first time I made it... Not the cuties looking but So Yummy!!! the second picture was for my Husbands birthday last year.. As you can see it starts to look prettier with time! But it is always Delicious!!

"Pantry Pasta"

Perfect when you need to use up ingredients in your pantry! 

This is something that I like to do when I have food that needs to be eaten and I throw it all together and it kind of goes like this....

What you need: Pot, Strainer, Measuring Spoons, and Mixing Spoon

4 Cups Water
1/2 package of pantry Pasta
1/2 Bag of Frozen Veggies or about 2 to 3 Cups Fresh Veggies
3 Tablespoon Olive Oil
1 Tablespoon Red Wine vinegar (or whatever you have in your pantry)
2 Garlic cloves minced or 2 teaspoons Garlic Powder
1 Teaspoon pepper
1 Teaspoon Italian Seasoning

DIRECTIONS: 
Bring water to a boil, then add pasta. Let water come to a boil again and add in vegetables. Once pasta is cooked and veggies or softened poor into strainer. Poor back into empty pot but not over heat! Poor Oil and Vinegar over pasta mixture then stir in till well combined. Then add in the rest of the ingredients and stir well. Then serve!

Here is what I made the other day. I used Vegetable penne pasta noodles, mix frozen vegetables (corn, green beans, carrots and peas).
