So my parents lived in Cheyenne Wyoming for a year and fell in love with Taco Johns Potatoes Ole. They would not stop talking about them one night and it made me want them really bad even though I had only had them once. So here is my take on Potatoes Ole
4 Potatoes Chopped into cubes
1 Cup Cherry tomatoes halved
1/2 Cup Onions
2 Tablespoons Chilli Poweder
1 Tablespoon Cajun Powder
Salt and Pepper to taste
1 Recipe homemade salsa (can be found in the search bar under Salsa)
1 Recipe homemade guacamole
3 Avocado mashed
2 cloves of garlic minced
Salt to taste
Mash all together and serve
Place potatoes in skillet on 350 or in a pan over medium heat. Cook for about 20 minutes covered. Add in veggies and turn temp down to low or warm and let cook for another 10 minutes. Potatoes should be tender enough to pierce with a fork.
Pour mixture into bowl. Add salsa and guacamole to top. If you would like add in more fresh veggies like cilantro, tomatoes, avocados, mushrooms, etc
