Your Mottoe?

Don't you just love a great quote? Something that helps inspire you and makes you feel great! Sometimes you are lucky to find ones that you need in your life!? This is my most recent.


My husband and I were married young and with that came lots of sacrifice. Lots of jobs we hated, lots of time apart, lots of schooling, and never having any money. We chose that! Yes, it is hard and sometimes really hard. Now I am not someone who has a lot of wants but being this poor it’s hard to even budget needs. The best part of all of this is the example we are setting for our children and for the growth that we are blessed to have. One day we are going to look back at now and say WOW we did it! I am so grateful for that! We have high ambitious dreams and always have! The great part is we keep powering through so we may achieve those dreams, and I know one day we will! Then it will all be more than worth it!!

I encourage you to take time to find mottoes to find quotes and inspirational stories to help guide you through the bad and the good! It helps! It helps remind you that we are all human and we all struggle at times! If there is a will there is a way! Make your goals and start guiding your life to achieve them! Talking About Weight and BMI with Children?

So I have so many other post I am in the middle of writing but this is just blowing my mind right now and I have to talk about it. Again, this is my own personal opinion on this! Also, I am very passionate about this and I am sorry if it comes across crud or even confusing in parts I am just so frustrated that this is even happening!

Back story  there was a girl in Florida who plays varsity volleyball whose mother was given a letter from the school claiming her daughter is at risk for obesity. This is a Florida State law to run these test on kids and all of it is based on their Body Mass Index AKA BMI. Okay this is absolutely ridiculous. This is little girl is skinny first of all and I HATE that BMI does not calculate MUSCLE! From one muscular person to another you are not obese just because a machine, which has a 50% accurate rate, says you are!

I think that we as adults are over bombarding our kids with weight! We are so shallow and not allowing our kids to just be healthy happy kids is just sad! Who gives about weight? I say are you eating fruits and veggies? Are you playing outside or doing any athletic activities? Are you parents taking the time to make sure they are eating well and staying active? This is a parent’s responsibility. When I was working at the gym sometimes I would help Life Guard. I remember once that there were two moms with their kids in the pool. They were leaning up against the pool wall and talking about how much they hated their bodies. They were getting very vivid and specific. To no surprise to me one of their daughters, about 10, joined in and said "I know I hate my arms, and my tummy is not flat enough". No exaggeration she probably weighed 80 lbs. BUT that is the example that we are giving our kids these days!! It blows my mind!

Yes, I help transform people to healthier lifestyles for a living. My husband is in chiropractic school and has the same goal as me. Will we talk about weight and clothe sizes with our kids or even in front of them? NO!! They are to be kids. I want them to go and play because it is fun! Not because they need to burn off the brownie they ate! I want them to eat broccoli or watermelon because it tastes good not because they're getting too fat. The last thing I want them to ever do is be worried of how they look or if they are fat! That is the entrance to a lifelong struggle of a relationship with food and body image. I DO NOT want that for my children and I know my husband does not either.

My Husband and I are both big athletes and we are both built "muscular" these are the bodies god blessed us with! Do we chose to take care of ourselves? Yes and that example are all that my kids will need. No discussions, no forcing, and no making our kids feel like they EVER need to worry about counting calories or if they look too fat in there jeans!

Jag Modeling Agency

This is Something I very much believe in! 

This agency features models from size 6/8 to size 18/20. One of the models described her weight as "I do not think of myself as skinny or fat I just think of me as me. It's just where I am at and who I am" when taking pictures "I don't worry about sucking in I worry about getting a great shot". They also reveal in this video that most European companies produce clothes that are curvier and they have a far lower obesity rate than us. I believe and agree that most women become over weight because they know they will never be a size zero. I find it funny that these flat figured women are to be desirable. We are women we are meant to have fat for our bodies to function correctly. This constant push to be "skinny as a rail" is just sad. I believe that push is what is making our obesity rate among women continually inclining.

I say be happy with who you are! As long as you are healthy and taking care of yourself weight is just a number and so is the sizes we wear. Smile for what you have and own it!!

Fruit Leathers

Yep from scratch and super easy!!!

INGREDIENTS:
2 1/3- 3 Cups slightly ripened Fruit (I used Strawberries)  
2 teaspoons Lemon Juice
Honey, Sugar, or Agave to taste (I used about 2 Tablespoons Honey)

DIRECTIONS:
Heat Oven to lowest temperature 140-160 F. Line a baking sheet with microwave safe plastic wrap or silicone baking mat (look at pic below). Set aside. 

In food processor or high processing blender poor in fruit and lemon Juice and pure. Add in sweetener of choice to taste. Pour evenly over baking sheet. Place in oven for 6-8 hours. Until center is not tacky anymore. Let sit till room temp then peel off and place onto wax paper. Cut into long strips and roll up. Store in air tight container.

VARIATIONS:
You can add in spices like cinnamon or nutmeg to make fun twist also feel free to try with different kinds of fruit! If you do not want to roll them up cut into pieces just as fun and tasty! I live in the South in the humidity so for me it was easier to roll up after it had sit out over night and gotten softer, I also do not keep the lid on my container always to keep it softer as well.

These were the ones that I made for my husband for our 3rd year anniversary. Three years the gift is to be Leather so I made Fruit Leathers!

Weight Gain

First I would really like to say that I'm not at all trying to offend anyone.

With pregnancy I have so far gained 30 pounds. I gained 10 right before I got pregnant, 10 in the first trimester, and 10 in the second. This weight gain has taken such a tole on my body! I can not believe that only five years ago I was 60 pounds heavier than my regulated healthy weight. I cannot believe that I was working out, walking around campus, and being active with friends. Now yes I did have more muscle so that tributes to the weight but still. I am now so achy it is so hard for me to do yoga, clean house, walk, stand up, sit down, and to sleep. I cannot imagine having this weight all the time! So painful and so hard on my body! I am so grateful to now have the knowledge of my own bio individuality. That I can take care of myself and keep my weight at a constant healthy level. I do worry, I worry allot. I think everyone who has been over weight worries about the weight coming back. It is going to take time after this pregnancy to get back down. I am so excited to do so cause I will feel so much better!! I will be able to be more active with my baby, take care of us, giving him the tools and example to take care of yourself in a healthy manner!

Weight loss, especially in a healthy consistent manner, is a gift and a blessing!!! Everyone is capable of being healthy and feeling well and everyone deserves it!!!

Mexican Casserole

Freezes well and taste better ever time re-heated!

INGREDIENTS:
1 Can (10 3/4oz) Cream of Chicken Soup
1 Can (4.5oz) Chopped Green Chiles
1 Container (8 oz) Sour Cream (I use Plain Greek Yogurt but up to you!)
1/2 Cup Milk (your choice)
2 1/2 Cups Cooked Chicken Breast then Shreded
8 Yellow Corn Tortillas Torn into Pieces
1 Medium Green Bell Pepper Chopped (if you want it spicier use a Poblano Pepper)
1 Large Tomato Chopped
1 1/2 Cups Mexican Cheese Blend

DIRECTIONS:
Heat Oven to 350 F and spray 13X9 inch pan with cooking spray of choice. 
In Large bowl mix soup, chiles, sour cream and milk till well combined. Add in chicken, tortillas, and pepper stir till combined. Add in Tomatoes and 1 Cup of cheese. Spread into pan and cover with foil.

Bake for 40 minutes. Uncover and sprinkle remaining cheese on top then bake uncovered for another 5 to 10 minutes. Till nice and gooey!

OTHER VARIATIONS:
Instead of adding in the corn tortillas leave them whole and use the casserole as filling and into a Taco. You can also opt for flour tortillas and use the casserole as filling for burritos. All of these are super yummy!

"If You Like PiƱa Coldadas"

I wrote this post awhile ago and it just feels like time to put it out there.

So I think most of us know the song "If you like Pina Coladas and getting caught in the rain..."  this is one of my favorite songs! I find it to be so funny! It is about a man who replies to an add in the paper that a women wrote in wanting to escape the everyday. He goes to meet this girl and finds out that it is his own wife. It cracks me up! They laugh and re kindle there love finding out that they were longing for the same things and did not even know it and in fact were looking for it with someone else yet it sent them to each other.

Hopefully this does not come across too confusing... This is something that has been on my mind a lot and it was kind of difficult to put onto paper..

 Everyone looking for the "perfect" life somewhere else when most often it is right in front of us! Now with that said I know it is not easy and that there is no real perfect life but man you can work on your perfect life! Life is what you make of it and I believe you can make your own perfect life. The perfect life meaning what you want out of it and achieving your own goals.

When I was growing up I dreamed of many things singer, actress, dancer, fitness instructor, song writer, personal chef, even at one point I wanted to be a professional softball player or go to the Olympics in Soccer or Swimming. Now the older I got things definitely changed.

Now if you read this blog you know that I did become a fitness instructor, personal trainer, and health coach. One thing I did not plan that much on was marriage. I figured that would happen in my late 20's early 30's. I met my husband at 20... Married him a year later and now making my new Perfect Life. I had no idea how fulfilling being a wife and mother would be! To me that is a huge part of my perfect life! I love cleaning the house and making dinners for when my hard working husband comes home! I can not wait for the crazy kid life that will be in store for us in just a few months. Now I know this sounds very old fashion but to me this is the perfect life! Writing up my grocery lists, vacumming the floors, meal planning, and more! The reason that it is the perfect life is because this makes me happy! I love the relationship that I have with my husband and the life we are building together. Sure it gets tough some times and it can be a little scary, but that is life! I enjoy the dance parties we have pretty much every day, working out together, keeping score at his baseball games, playing bored games at night, and more than anything being silly and loving each other!

I have had many people explain to me that I am the ecseption that what I have with my husband is one in a million... Now I do realize that I really lucked out. I found someone who has the same goals, dreams, humor, interests, and passions that I do. That does not mean that we do not have to work on it! Here are a few rules that my husband and I tend to live by.

Say I love you all the time! Every chance you get!
Always say please and thank you!
Never go to bed angry!
Always say how much you appreciate them!
Remind them why and what you love about them!
Always share what is on your mind!
NEVER keep secrets!
Always Apalogise!
Forgive quickly!
Realize when you are in the wrong!
Remember neither one of you can read minds!
Never hold things against each other!
Pray together!
Set goals together!
Never forget the power of touch! 

Perfections takes work. Everyone has room to grow and improve. So make a list of what you want and reward yourself for every goal made and let go of the ones that do not work out. It happens, no point in beating yourself up over them! The point is to build your happy life your "perfect" life.

So get out there. Make your Perfect life but do not forget to look at what is right in front of you. Often that is your answer, that is what you need!

Potatoes Ole

So my parents lived in Cheyenne Wyoming for a year and fell in love with Taco Johns Potatoes Ole. They would not stop talking about them one night and it made me want them really bad even though I had only had them once.  So here is my take on Potatoes Ole

4 Potatoes Chopped into cubes
1 Cup Cherry tomatoes halved
1/2 Cup Onions
2 Tablespoons Chilli Poweder
1 Tablespoon Cajun Powder
Salt and Pepper to taste

1 Recipe homemade salsa (can be found in the search bar under Salsa)

1 Recipe homemade guacamole 
3 Avocado mashed
2 cloves of garlic minced
Salt to taste
Mash all together and serve

Place potatoes in skillet on 350 or in a pan over medium heat. Cook for about 20 minutes covered. Add in veggies and turn temp down to low or warm and let cook for another 10 minutes. Potatoes should be tender enough to pierce with a fork.

Pour mixture into bowl. Add salsa and guacamole to top. If you would like add in more fresh veggies like cilantro, tomatoes, avocados, mushrooms, etc

The Secret

I have heard of this movie in passing and I knew that it had something to do with what you put out into the universe you receive... but that's all I knew... there is definitely more to it than that!

It is all about having the right mind set. Putting a clear goal in your mind, visualizing it, believing you deserve it, and receiving it.  So that makes it sound a little like you magically receive things by doing nothing. You do have to take steps to achieve whatever goal you are pursing.

Example:
Jack Canfield writer of Chicken Soup For The Soul. Made a goal of earning 100,000 in a year. At the time he was only making 8,000. All he thought about was this number 100,000 he even wrote the number onto a one dollar bill and put it on his ceiling so he would look at it every night and morning. The only thing was he had no idea how he was going to make this money. One day while in the shower it hit him that he had a book already written and if he sold this book for X amount and sold X amount of copies that he could make 100,000 dollars. He achieved this goal and the next year set a goal for even more. That is the power of the Secret. That if you truly believe you deserve something, all you think about is that possitive thing and believe you deserve it you will recieve it!

One big thing that this taught me is that yes I am a very positive person but I was not always putting things in my mind in a positive way. For instance thinking don't get hurt over and over I'm probably going to get hurt. Instead I now think Safe. I feel much safer! They also used the example of when you go to the mail box and you are thinking no bills no bills you are going to open it and see bills. Instead think money money money and there are people that do this and receive money. Weather it be from a side job, work, or money owed to you that you may have forgotten about.

I know this all may sound a little crazy but I have started to do this with various phrases for couple weeks now and I feel so much better and more positive I love it!! Check it out I promise it is worth your time! If you have Netflix it is now available on there or you can buy it from Amazon.

Remember to always think everything in the most positive manner at all times! The things you desire in life think of them and believe that you deserve it and you will receive it!

Updating: Changing things up!!

So I started this blog about a year ago... I had just started at Integrative Nutrition and I was so excited to fulfill my dream of going to not only Nutrition school but my number one choice school. I was so ready to know everything about food and to be this Professional Health Coach.

Words could never express my gratitude to IIN and all they have taught me! It was truly one of the best experiences of my life!!  They also taught me a valuable lesson of "be yourself" and do what you love.

I love talking to people about Health and Nutrition but to be honest I always kind of felt this heavy weight to never make a mistake and to always be very very professional 100% of the time.... Unfortunately with that attitude it kind of made me fall out of love for it... The intimidation and the I'm not good enough were too tough to handle.

Enough is Enough 

I am going to love this again and the first step is to be me 100% So here I go!
I love to laugh and be really silly especially  with my husband Seth. We are expecting our first and being a mommy and wife is number one priority in my life!

 I love all kinds of music from all eras. I grew up on 70"s rock and old country songs so those are most dear to my heart. I love to meet new people. I love talking to strangers and when you get to know me you'll learn that I am approached very often, it is awesome. I love art and history. My mom is an amazing painter, decorator, and has been making and painting ceramics my whole life I love doing artsy stuff with her. I am very out doorsy, I love to play sports and working out. My favorite exercises are swimming, running, yoga, and kick boxing! I taught yoga and was a personal trainer from 21- to present. I would love to be Turbo Kick, PiYo, and Turbo Hip Hop certified sometime in my life! Now with that you probably think I am stick thin ummm NO! I do not want to be either. I love feeling good and being in shape a number on a scale means nothing to me! The numbers I look at our blood pressure, cholesterol, and how I feel!!!

I fell in love with exercise at a very young age. At three I would be sitting in a little rocking chair doing sit and be fit while my mom folded laundry. As I got older it did get a little harder... I have always been very muscular and it felt like no matter what I did I just kept getting thicker. Nothing worked until I trained for a triathlon. I learned that I have a lot of extra energy and when I burn it through intense cardio it is this amazing endorphin fueled high! I have never been the same since. Also, through that experience I lost 60 lbs in a few months... I never ever thought of wanting to get thin. I was doing it all for that joy it brought me and how amazing I felt. Now if I could help people find that "high" and joy in their own life that would be an amazing life to live!

That is what I want to do, just help people see that being healthy and happy is not a chore, it is not a status, it is a way of life and EVERYONE is different!!


Confessions:

I eat what I want, what sounds good to me! I cook from scratch and I use local range free organic ingredients. There are scientific proof that eating organic and local is very healthy. I do it because I feel better. Often when I eat "cheap" meat or dairy I do not feel well after. I do it to feel good.

I eat bread, cookies, cake whenever I want to! If I want it I make it myself from scratch! I feel if I have gone through all the work I deserve it! Now, I don't eat every cookie in the cookie jar, I always give to a neighbor or freeze my left overs.

I do not drink caffeine. I stopped when I was 19 by choice, I was drinking like 10 diet cokes a day and I knew caffeine was not good for you so I gave it the boot. I was soda free for a few years but now I do have a soda every blue moon. I do not do diet it contains aspartame which is an addicting sugar and you are not to have it when you are pregnant. I kind of think if you are not suppose to have it pregnant probably should not have it even when you are not. I often have soda to help settle my tummy and every blue moon I like it cause it is yummy. I do not drink alcohol Ever so I figure if I want to drink some calories sometimes I am allowed to via soda.

I very rarely eat out. That is usually a date night thing and a vacation thing in our family. We also rarely have fast food. We first established this rule right after we got married to save money then we learned we are pretty good cooks and can make it at home even better!

That is me!!! I am a fun silly girl that loves to laugh and enjoys every moment of life and if I could do anything with my life for others it would be to help them find their joy, happiness, and health in their lives!! 









This is me and my hubby. It takes hours to take family photos cause all we want to do is be silly. We have finally learned those end up being the best pictures! Life is too short to take everything seriously is probably one of our main family mottoes...

A close friend of mine put a post on facebook asking friends what their questions were about health... I was amazed by the comments made! A lot of them have very quick answers and easy solutions!!

Update

I am so sorry for the lack of posts... I do not often write very personal things but here we go!

I am expecting!!! I am five months and I have been very sick since eight weeks. It has been an amazing beautiful opportunity. I have learned so much about pregnancy and so many natural tricks to help with nausea, heart burn, and morning sickness.

I am slowly starting to feel better which has been very nice and I will be back to blogging!!

Listening to What Your Body Needs Not What Your Mind Wants

I have been a little off lately... My body is going through a lot of changes. One of the things that I talk to my clients allot about is realizing what your body needs and not what your brain is trying to tell you. Now more than ever in my life I am living that rule everyday!

I have become so much more intuitive to what I can and can not eat. This sometimes could be a little difficult since I believe I had my brain convince my body what it needed. My diet has changed drastically! I am eating things I never use to eat and now that I am living in a warmer climate my body is constantly telling me different things it needs. For instance I am more of a veggie eater and lately my body can not get enough fruit. Now eating veggies is not bad but it shows that my body needed a lot more fruit. I have never felt so in-since before it is truly beautiful!

Another thing that we do not realize, sometimes when we can not figure out what our body needs... It is crazing movement! I never knew this prior to attending IIN. It makes so much since to me now that our bodies really do know what is best! Sometimes it does not need a food or a vitamin but to get moving to feel better.

When we want that doughnut at 6 am that is our brain craving but if you find that you are craving chicken at noon. Your body is probably trying to tell you "hey I need some protein". This has been an extreme blessing in my life right now. If I had not learned this skill of listening to my body I am sure I would be going crazy and possibly starving myself.

I would love to give you a list of if you are craving this your body needs that or when you are craving movement. Unfortunately everyone is different. It depends on your lifestyle, personality, activity level, if you have kids, and more!

Chiropractor helps Pro Skier after bad concussion

Giving up was not an option for this skier!

Great story of a professional skier, Jay Panther, who got a severe concussion and suffered for weeks. Till he found Dr. John Hatch at The Nielsen Clinic 47 W. 300 S. Heber City Utah 435-654-5888.

He describes Dr. Hatch's work as Voodoo that works! After just a few sessions with Dr. Hatch a fallow up MRI revealed no lingering signs of a concussion. He is still working with Dr. Hatch and hitting the slopes hard!

I have also been to Dr. Hatch

 

He is actually the one helping me through my food allergies. He helped my sister and her two kids 3 years old and 4 months old after a very bad car accident. Also, my sister in Law after a horrible concussion after her car crash.

He has done such amazing work! My favorite part is yes it is a little weird but you do feel it working! Even when you are in the middle of the session you are like "wo my body is changing" I love it!

If you are in need of some alternative medicine or what you are doing is not working out. I urge you to try and find other Healers who maybe able to help you!

No More Grains :(

So I have been filling very Nasues and not myself for the last couple of weeks. My cousin who is a Chiropractor came into to town and long story short we discovered that I have a grain intolerance. So all I can now have our potatoes and Quinoa is fine. I can still also have fruits, veggies, beans, light meat, light corn flour and light dairy.

The recipes on here will be changing soon! This has been a little difficult getting use to. I am only on my third day and I still have cravings like pizza and tortillas. I am sure that if this makes me feel better in the long run then it will be easier to fallow.

Spicy Tortellini & Spinach Bake

This is so easy and you can make it as mild or hot as you like!

WHAT YOU NEED:
Sauce pan, pot, spoon, garlic mincer (or you can cut them by hand with a knife), lemon zestier, whisk

INGREDIENTS:
12oz of Spinach and Cheese or Cheese Tortellini (there is a frozen brand at Target that is good at cheaper)
1/2 Tablespoon Olive Oil
3 Cloves of Garlic
2 Tablespoons Whole Wheat Flour
2 Cups Milk (of your choice I use 1% Organic)
1/2 Teaspoon Sea Salt
1/2 Teaspoon Ground Pepper
1 1/2 Teaspoons Dry Basil
1/2 Teaspoon Dry Pepper Flakes (this is where the heat comes in you can make it more or less I use 1 Tbs.)
1 Small Lemon (optional)
3 to 4 Cups Fresh Spinach
1/2 Cup of Parmesan Cheese

DIRECTIONS:
In pot boil 3 Cups water. Add Tortellini and prepare as on package. Mince garlic cloves. In sauce pan poor in olive oil then add Garlic. Saute for about 1 minute. Then add milk let come to a light simmer about 2 minutes. Add in flour and whisk together ingredients till no more lumps about 1 minute. Add salt, pepper, basil, and pepper flakes. Continue stiring till sauce is thick ( to know when it is done, if it coats your spoon).

Add in tortellini and and spinach till combined. Cut lemon in half and squeeze out juice into pan and zest onside into pan. Add cheese if you like mix well together.

Moving

I am so sorry for slacking on my post I am in the middle of literally moving me and my husband across the country. We will be settling in Georgia in March so things should be getting better from there plus I will have a bigger kitchen and more fresh produce there! Very exciting!! I am sorry for the lack of advice and recipes but I promise that I will make up for it in March but mostly April!!! Thank you everyone for your love and support you are all so amazing!!!

Find CERTIFIED Healers

Doctors, Nutritionist, Message Therapist, Chiropractors, Dietitians, Life Coaches, Health Coaches, Acupuncturists, Therapists, Physical Therapists, etc.

If you are struggling in your life and need help I strongly erg you to go and see a certified person that can help you. Now a days with the internet anyone can post anything... It does not always mean that they can help you.. In fact they can even make you worse. Our minds and bodies are a very delicate thing!

"One mans cure is another mans poison". This is very true. We are all made differently, we all have different digestive tracks, blood types, ancestries,and metabolisms. All of these are factors in how we take in foods. Depending on our Bio Individuality there are foods to avoid and foods we need more of but it depends on each individual. So if you ask Bob how did you lose the weight and he says by eating more protein and less carbohydrates does not mean that is the best diet plan for you. You can have kidney failure, raise of LDL levels (bad cholesterol), and more! If you would like to have a specified diet plan that you can lose weight in a healthy way for your body and still eat foods you enjoy go to a specialist! In fact I can do that!! If you are struggling with depression family support is an amazing thing. For more help and to make sure you are completely taken care of in a Healthy manor please go to a Therapist, Psychiatrist, or a Councilor that is certified and can help with depression or whatever mental or emotional issues you are struggling with.

If you are very ill and not getting better please go to the Doctor. Yes it can be a pan to pay for the doctor but they are Doctors they know how to help you and make sure that you are taken care of. Your health is not something to take lightly.

If you are having back problems and your brother keeps popping it and it is not getting better. Go to a Chiropractor. They are Doctors as well and you may think it is your back but there could be something else like your hip. They can find the cause of the problem and take care of you and eliminate your pain.


I could go on with this forever but my point is this. These people all went to school for a specific reason they all have their place in the world and can help you! Ya, free is nice but do you really want to play Russian Rullet with your well being. It is really that critical! What we eat, how we feel, how our bodies feel are very critical things so please go to a specialist and someone who is certified and can help you in a healthy manner. Now there maybe specialists you do not like or feel comfortable with. There are many of us out there! Find who you feel comfortable with and you feel can truly help you! Do not worry about feeling all of us got into this healing world to help and heal others and that is what matters most to us is how you feel and your health.
