It is NOT "Cheating"

It is Enjoying!

Yes it is nice to endulge in great yummy treats but why call it cheating?
Why would you take something that is a reward to yourself in a negative way by calling it cheating?
Why would you like to call it cheating? Cheating is a bad thing. So why would you want to tell your body "Hey what we are doing right now is really bad."?
Relating it to something negative your body is going to react in a negative way!

JUST ENJOY!!!!! It is time to have something that you enjoy, something that you do not get to have often and if you tell your body "mmmm enjoy this" then it will! Plus it will respond in a healthier better way like digesting better!

I am not saying sit on your couch and eat junk food. I am saying if you want a treat then take the steps to make that treat! If you are willing to put the time and effort into that treat, then you deserve it! What better way to reward yourself then eating your treat?!?!!!

Chocolate Meringues

William-Sonoma Essentials of Baking 

It is another great light recipe and it is Gluten Free

What you need; Sifter, Spatula, Kitchen aid, Parchment Paper or Wax Paper (again if you do not have a kitchen aid you can use a hand mixer or a hand wire whisk)

Ingredients:
2/3 Cups Powder Sugar
2 Tablespoons  Cocoa powder
3 Egg Whites at room tempature
1/4 Teaspoon Cream of Tartar
1/3 Cup granulated Sugar
1/2 Cup Mini Semisweet Chocolate Chips
Oven Temp 250 F

1) Whip egg whites and cream of tartar till soft peaks form.
2) Slowly add granulated sugar till stiff peaks form.
3) Remove from mixer.
4) Sift powder sugar and cocoa powder onto tinfoil, wax paper, or parchment paper. Set aside.
5) With rubber spatula gently  fold in sugar and cocoa then chocolate chips
6) Line baking sheets with parchment paper (I have used wax paper but they did not come off as easy). Spoon on to pans into small balls.
7) Bake. To test try to lift cookies to be able to see bottom. If nice and brown you are good to go.
8) Enjoy!

What I Like to Whatch, Read, Fallow, and Use

There are a few things that I look at for great ideas and things that I watch that inspire me too!

The Chew it is on ABC Monday threw Friday at 12 pacific and 1eastern. I love it there is fun foods that are all made from scratch! You can also go to there web sight for there recipes www.thechew.com

www.MyRecipes.com There is such a great variety of dishes on there sight! You can also sign up for there emails and they send you a different recipe every day!

DR. Oz Show it is on Fox Monday threw Friday. In Utah it is on at 10 am and 4pm (you can go to www.doctoroz.com for your local times). This is such a great place to learn! There are a lot of tips and it is fun to try different things and see what works best for you!

Betty Crocker Money Saving Meals OK I have a habit of not exactly fallowing recipes. I like to add or subract ingrediants here and there. This book inspires me most! I love it! There are great pictures, great tips to change recipes, it tells you how much it is per serving, and nutritional facts! There are a great variety from chicken to tofu, meat to vegetarian, and Italian to American. It is the best!!!


William-Sonoma Essentials of Baking It is slightly advanced but my favorite baking book! It has great recipes all from scratch I LOVE IT!


Vitamix Whole Food Recipes Some recipes do require a vitamix but others can be altered. It is all from scratch and it shows all nutrition facts. They also have great alternative recipes like whole wheat flax seed pancakes. They are great!

Great Read

Integrative Nutrition 

 If you are interested on a basic over view of pros and cons of a variety of diets. Learn more about nutrition and some great ways to help you to a healthier life plus some easy healthy recipes. Read this book!  The book is written by Joshua Rosenthal who is the Found/ Director of Integrative Nutrition. So if you want to learn some more but do not want to go to school or do not have time this is a great  read!!!

Ok, yes it is the school that I am attending so I am kind of pimping out my school... But i have looked for the school for me for years and I found IIN two years ago and I knew it was the place for me! So it is a great place to check out but if you just want some knowledge this is really a great book. If you would like to know more about your own body and what would help please let me know I would love to help!

SHHHH, Listen, Listen, Listen

Find what you like and what your body likes!

It is always nice to have advice and help from others but what is most important is to listen to your body! What do you like to eat? What does your body like you to eat? What activities do you enjoy? What activities does your body enjoy? When I say "what does your body like to eat and what activities does your body enjoy" that does not mean I am trying to trick you into thinking you can only eat leafy greens. I mean how do you feel after you eat certain foods and how do you feel after a specific work out. I think too many people believe what they like, that other people should like it too. Or what helped them lose weight or feel better will help all others as well. False! We are all our own individuals and yes some times we find success in others advices but not always. Our body knows us best and we need to learn to listen to it! It can tell us many things!


So instead of fallowing a diet you are miserable on or pushing your body to extremes you are not enjoying start journaling!! Find what makes you feel good and what makes you feel bad. You will find more success in this than any diet! The best part is that it is a life change! So instead of fallowing a diet and losing 30lbs then months or years later gaining it back and more cause you are unable to follow the rules any longer. Listen, listen I promise you will learn so much about yourself and when you discover what your body needs you will lose and keep it off. Plus there are minimal rules involved!

 I have many food inheritances and I never realized how badly I felt when I was eating the wrong things for my body. Things my body was not accepting as fuel because it was not the fuel my body needed.So instead of doing a generic food log I made a list. I took a piece of paper and drew a line down the middle. At the top I wrote " Jenn's Foods what I feel good after eating" then I wrote "Likes" on the left side of the line and "Dislikes" on the right. I discovered that my favorite tasting foods are often on my "likes" list. With out me realizing my body was working together trying to help me see what it needed to eat to fuel my body and feel my best! Now, I do think that there are great ways of eating to help people and everyone should try to find what works for them! You can even take a little here and there and make your own plan!

 I will have more post of what foods can help with what. Like what to eat if suffering from candida and what foods to avoid like coffee and foods to add like coloreds as I learn more in school and from others!

Angel Food Cake and Whipped Cream

One of my favorites!

What you need
Hand mixer or kitchen aid, Angel Food cake pan (tube pan) or cupcake pans or mini angel food cake pans, Oven, and spatula. (If you do not have a mixer and/ or want to go "old fashion" you can whip by hand which is a fun way to burn a little before eating!)

 

Angel Food Cake

Ingredients:
1 1/2 Cups Egg Whites (about 10 to 12 eggs) at room temperature
1 1/4 Cups Cake Flour
1 1/2 Cups Granulated Sugar
1 Teaspoon Cream of Tartar
1/2 Teaspoon Salt (I like to use "Real Salt" or sea salt)
2 Teaspoons  Pure Vanilla Extract
1/2 Teaspoons Almond Extract

1) Beat egg whites till stiff peaks form
2) Add salt and cream of tartar to egg whites. Incorporate into batter.
3) Add Vanilla and Almond Extracts to egg whites
4) Sift flour and sugar. *Take two pieces of tin foul or wax paper and sift back and forth at least 3 times.
5) Remove Egg Whites from mixture. Fold sides of Foil or wax paper and slowly add flour mixture (about 1/4 of a Cup) then with rubber spatula gently fold in flour. Repeat till all is incorporated. *Do not over mix! Egg Whites will fall and all is lost :(
6) Gently spoon into pan(s) and bake
7) To test, when in oven gently and quickly push on cake if it springs back up it is done! 

Oven Temperature 375 F Cake 60 Minutes, Cupcakes and Minis 15-25 minutes depending on size.

Home Made Whipped Cream

Ingredients:
2 Cups Heavy Whipping Cream (I try to by local or organic)
2 to 3 Tablespoons Powder Sugar

Whip cream till stiff peaks form then slowly add powder sugar to taste. (A medal pan that you can let cool in fridge works best and I try to cover my hand mixer with a big toil to prevent mess. Be Careful! Make sure the towel can not be caught by the mixer.)

My favorite part of making it yourself is that you can add as little or as much as you like! I like to taste the cream more so I do not add as much powder sugar as others.

Finished Product! I like to add as many fruits as I can! This has Strawberries and Raspberries.

Why I Chose To Make This Blog...

I Want to Share and Help!

I have written some of my qualifications like being a Yoga Instructor and currently getting a Degree in Health Coaching and a Certification in Nutrition in my "about me". But why I really wanted to start this blog....

I have struggled with weight but mostly healthy food choices my whole life. I have always been very active but I have yo yo'd since I was 12! The older I get the more I am learning what to really put in by body but mostly what my body really needs! I have severe IBSC and I have many many food intolerance. I have had this battle since day one but it took a bad turn when I was 15. I have gone to many specialist and yes I needed some of there help but now I am realizing that no one ever told me that I had all the answers!!! LISTEN TO YOUR BODY!

When I started to listen I learned so much but mostly that I function so much better when I eat foods that I have made from scratch! Also, foods that were local, in seasoned foods, and organic products. My body does not have to work as hard to break down and I don't feel sick. Secondly, I realized what exercises I needed for my body type but also what exercises that made my body feel better after doing. Thirdly, I realized  how much of an effect my environment had on my body. Including my work, my home, my family, my friends, and so on. I have learned so much and I am continuing to learn!
 Now that I have found the keys to make me happy I want to help people find there keys!

Healthy Life is a Happy Life Goals

My goal is to create a place to help people! I am married and I love to cook for my hubby, friends, and family. I have many goals but my first goal is to cook at home from scratch as often as I possibly can! I find that my favorite restaurant foods are even better at home plus you can skip all the extra additives and preservatives! Another one of my goals is to cook healthy satisfying food and be thrifty all at the same time.

When I was first married I saved so much money on groceries but I was buying all the wrong things. They were all processed foods that I knew I could make myself and I knew I could make them tastier and healthier. But, I thought saving money was more important. How silly! Nothing is more important than our own health and well being!

I had a close friend say it in a great way.. "Why do we work? To have money. We have money to be able to have the things we need like food. So shouldn't we spend our money on good healthy food?!"
