Angel Food Cake and Whipped Cream

One of my favorites!

What you need
Hand mixer or kitchen aid, Angel Food cake pan (tube pan) or cupcake pans or mini angel food cake pans, Oven, and spatula. (If you do not have a mixer and/ or want to go "old fashion" you can whip by hand which is a fun way to burn a little before eating!)

 

Angel Food Cake

Ingredients:
1 1/2 Cups Egg Whites (about 10 to 12 eggs) at room temperature
1 1/4 Cups Cake Flour
1 1/2 Cups Granulated Sugar
1 Teaspoon Cream of Tartar
1/2 Teaspoon Salt (I like to use "Real Salt" or sea salt)
2 Teaspoons  Pure Vanilla Extract
1/2 Teaspoons Almond Extract

1) Beat egg whites till stiff peaks form
2) Add salt and cream of tartar to egg whites. Incorporate into batter.
3) Add Vanilla and Almond Extracts to egg whites
4) Sift flour and sugar. *Take two pieces of tin foul or wax paper and sift back and forth at least 3 times.
5) Remove Egg Whites from mixture. Fold sides of Foil or wax paper and slowly add flour mixture (about 1/4 of a Cup) then with rubber spatula gently fold in flour. Repeat till all is incorporated. *Do not over mix! Egg Whites will fall and all is lost :(
6) Gently spoon into pan(s) and bake
7) To test, when in oven gently and quickly push on cake if it springs back up it is done! 

Oven Temperature 375 F Cake 60 Minutes, Cupcakes and Minis 15-25 minutes depending on size.

Home Made Whipped Cream

Ingredients:
2 Cups Heavy Whipping Cream (I try to by local or organic)
2 to 3 Tablespoons Powder Sugar

Whip cream till stiff peaks form then slowly add powder sugar to taste. (A medal pan that you can let cool in fridge works best and I try to cover my hand mixer with a big toil to prevent mess. Be Careful! Make sure the towel can not be caught by the mixer.)

My favorite part of making it yourself is that you can add as little or as much as you like! I like to taste the cream more so I do not add as much powder sugar as others.

Finished Product! I like to add as many fruits as I can! This has Strawberries and Raspberries.
