Vegetable Lasagna

If you are like me and do not like the grease that meat makes this is a great alternative and just as Delicious! 

What you need: Cheese grader, 2 Bowls, Pot, Spoon, Measuring Cups and Spoons, Strainer, 8" or 9" Baking Pan

Ingredients:
1 Medium Zucchini
2 Cups Marinara Sauce
1(10oz) Package of frozen Spinach thawed
1 1/2 Cups Cottage Cheese (of your choice) or (12oz) Ricotta Cheese
1/3 Cup grated Parmesan Cheese
2 Tablespoon Fresh or 1 1/2 Teaspoons Dried Oregano
(4oz) about 5 Mushrooms chopped
1 Package Dried Lasagna Noodles (you only need 8 noodles)
1 Cup Mozzarella Cheese

Directions:
Poor water into pot, bring to a boil and place Lasagna noodles inside. Let cook then drain.
Using cheese grader shred up the Zucchini then mix with Marinara in bowl.
Drain thawed spinach in a strainer then squeeze out extra moister by using a clean kitchen towel or a paper towel (I like to just use my hands to squeeze it out). 
 Mix the Spinach, Mushrooms, Cottage Cheese, Parmesan Cheese and Oregano in separate bowl.

Coat baking pan with 1/2 Cup  of Marinara mixture. Then lay two Lasagna noodles on top of sauce. Add a couple of Tablespoons of Spinach and Cheese mixture. Spread evenly then poor 2 Tablespoons of Marinara sauce over noodles and sprinkle 1 Tablespoon of Mozzarella cheese.
Repeat Layering 3 more times beginning with 2 more noodles. On last top layer add remaining Mozzarella.

Cover with plastic wrap and then aluminum foil. refrigerate up to 24 hours.
Heat oven to 400 Degrees Fahrenheit. Remove plastic Wrap then place Aluminum foil on top of pan and bake for 45 Minutes. Remove foil and add 10 more minutes to time. You want Marinara to be bubbling along the edges. Remove from oven and let stand for 10 minutes.

ENJOY!!!! 


 This can be a little bit of a confusing recipe... on the top was the first time I made it... Not the cuties looking but So Yummy!!! the second picture was for my Husbands birthday last year.. As you can see it starts to look prettier with time! But it is always Delicious!!

"Pantry Pasta"

Perfect when you need to use up ingredients in your pantry! 

This is something that I like to do when I have food that needs to be eaten and I throw it all together and it kind of goes like this....

What you need: Pot, Strainer, Measuring Spoons, and Mixing Spoon

4 Cups Water
1/2 package of pantry Pasta
1/2 Bag of Frozen Veggies or about 2 to 3 Cups Fresh Veggies
3 Tablespoon Olive Oil
1 Tablespoon Red Wine vinegar (or whatever you have in your pantry)
2 Garlic cloves minced or 2 teaspoons Garlic Powder
1 Teaspoon pepper
1 Teaspoon Italian Seasoning

DIRECTIONS: 
Bring water to a boil, then add pasta. Let water come to a boil again and add in vegetables. Once pasta is cooked and veggies or softened poor into strainer. Poor back into empty pot but not over heat! Poor Oil and Vinegar over pasta mixture then stir in till well combined. Then add in the rest of the ingredients and stir well. Then serve!

Here is what I made the other day. I used Vegetable penne pasta noodles, mix frozen vegetables (corn, green beans, carrots and peas).

Mind, Body, Spirit Work Shop

This is a Free work shop for women and it is Tuesday January 15 at 7PM at the LDS church located at 545 South 800 East, Orem, UT

We will be doing basic yoga taught by me. We will also learn breathing and meditation exercises.

I will be doing a food seminar. We will be learning how to balance our life with the help of the right foods!

To bring: A yoga mat or beach towel, note pad and pen, and ready to learn life changing information!

Bettering Those Around You!


So this post is a little more personal... Also, it is reared a little more towards women...

Since I am young I have only lived my adult life in College towns. The plus is having people around in my age group and usually more things to do on the cheap. One of the negatives that I have really noticed is the competitive drive. Now being competitive can be great! It can help you allot in life but in my opinion competitive and wishing ill for others are two Very different things!

 

Give even if it is a little bit 

I would love to live in a world where we uplift one another! Why is it fair for you to put others down around you and then you reaping all the benefits? Why not encourage those around us? Come together and make a better happier place as one! I know this may sound very cheesy but I promise when you start to wish those around you joy and happiness... You will feel more joy and happiness in your own life! Along with that it is a different joy and happiness you feel completely selfless and unconditional happiness for those around you!! 

Warning it can be addicting! Now with helping others it is an amazing beautiful selfless act. Be careful you have to remember if you are volunteering your own time, your health comes first! You cannot constantly put others in front of you and neglect yourself! I know this kind of makes it a catch 22 but so many get so involved with volunteering their time to others that their own health can and may be at risk. That is not OK. Helping others is Great but if you struggle with going too far and too much ask for help. Have someone there to remind you to take time for yourself! Ask others around you to help you out so you can still achieve your volunteering goals on time without wearing yourself out.

Now I would like to go to the flip side


I find that sometimes it is hard to take in other people’s well wishes. I believe, especially with women, we tend to not take anything genuine. I understand it is often a defense mechanism but by brushing off someone’s complement or hand for help actually makes you the bad person. Wouldn't you rather be the one to take the complement and feel good weather it was genuine or not? I sure would, because at the end of the day I am happy, positive, and a good person so that will be the only energy I will let in! It feels amazing!

I am horrible at asking let alone receiving help. I know there are so many great people out there wanting to help and be there for people! Now keep these people in mind for the next time you are sick or moving and Let them Help you! They want to do it and they like to do it! It does not make you less of a person! We are human and we CANT do everything no matter how hard we try. So take that open hand and let them help! 


I am sorry if this all comes across as a crazy rant but I am tired of smiling at others and giving others genuine complements and in return getting glares and attitude. That is just sad. We are all human and we all want a long happy life and I believe that is in our every day! So the next time you are at the grocery store offer to help the cute little lady in front of you and when you are out on the town and see a girl in a cute dress tell her! It means more to them then you think and it will make you feel like superman! Now if they chose to not take your help or complement that is on them not you! What matters is you tried to help someone have a better day! What a great gift to give! 

The challenge 

Try to give at least one complement a day! Now you may start with your family and or roommates but I encourage you to try and do it to the neighbor across the street, then the cashier at the grocery story, then the lady in the parking lot...  Try to get more and more comfortable so before you know it you will be giving everyone you see a genuine complement!

Find a local shelter to serve food, plant a tree in your local park, volunteer time to visit those in nursing homes and hospitals, offer to babysit for free, or  call a friend that you know is in need and offer your time!

All of these things will make you a happier healthier person!!!
