Home Made Pizza

Easy as PIE!!!!

People tend to be very scared of any type of dough which is understandable they can be very sensitive and some times advanced but pizza dough is NOT one of them! It is one of the easiest things to make I promise!

What you need; bowl, fork, measuring cups, glass measuring cup, rolling pin, pizza stone or cookie sheet

Ingredients:
1 1/2 Cups Hot Water
2 Tablespoons or 1 Packet Active Dry Yeast
1 Tablespoon Olive Oil (Peanut Oil works great too)
3 Cups All Purpose or Whole Wheat Flour (more may be needed)
1 Teaspoon Salt

Directions:
Measure water in glass measuring cup. Poor in yeast and whisk with fork till dissolved then add salt. In separate bowl measure out 2 cups of flour. Slowly add water mixture into bowl. While you are doing this try to be whisking the mixture with a fork. Mixture should start to thicken when it start to do so, ditch fork and start to massage dough with hands (kneading) add more flower as needed. You want to make sure the dough is smooth and a little tight. Then let the dough sit in a dry area to raise about 30 minutes. I like to use my microwave.

When dough has sat and raised get a cup of flour and sprinkle a little on top of dough and cover your hands, dough will be sticky. Knead again gently. Form into balls. Pin out dough with rolling pin onto pizza stone or cooking sheet till crust is to your liking. I like thin crust and then I have more dough to use too. (If you like deep dish style us casserole pan to bake dough in).

Place just pinned out dough into Oven at 420 F for 5-10 minutes, till dough starts to turn lightly golden brown in places.
Pull out and place desired topping(s) on and place back in the oven 5-10 minutes till cheese is melted and crust is a pretty brown. It can be hard with whole wheat so test though dough with tooth pick, in the middle of the pizza.

My Pizza... I know it makes me look boring but I love it! I don't feel heavy and weighed down after eating. I always make mine with lots of sauce and fresh veggies with NO cheese.




Chipotle Chicken Taco Salad

MMMMM MMMM 

Dressing:
1/3 Cups Chopped Organic Cilantro
2/3 Cups Organic Greek Yogurt
1 Tablespoon Minced Chipotle Chile, canned in Adobo Sauce(Mexican aisle)
1 Teaspoon Ground Cumin
1 Teaspoon Chili Powder
4 Teaspoon Fresh Lime
1/4 Teaspoon Organic Sea Salt

Salad
4 Cups Organic Romaine Lettuce
2 Cups Chopped Roasted Organic Chicken
2 Cups Organic Cherry Tomatoes halved
1 Cup Diced Organic Avocados
3/4 Cups Organic Red Onion
1 Can Black Beans

Combine all ingredients for dressing  and mix well. Toss all ingredients for salad then pour dressing over top. Then Enjoy!!!

*You do not have to do the organic ingredients but they are great suggestions and a healthier option!!! Also, this is still very good without the Chicken and be careful with the Chipotle Chile’s they are very hot.

 Ready to eat! I like it with fresh avocados as well
 Left overs are great wrapped up in a burrito!




Banana Bread

It is very filling and the best part is you can use a lot of local ingredients like milk and eggs!

What you need:
bowls, spoon, and rubber spatula, bunt pan or loaf pan, or even muffin pan

Ingredients:
1 3/4 cups Whole Wheat Flour
1 teaspoon baking soda 
1/2 teaspoon salt 
3 very ripe bananas 
1 teaspoon fresh lemon juice  
1/2 cup unsalted butter, softened 
1/2 cup granulated sugar 
1/2 cup firmly packed light brown sugar 
1/2 teaspoon vanilla extract 
2 large eggs  
1/4 cup milk
1/2 teaspoon cinnamon (If desired)

 Preheat Oven 375 F
Cream butter and sugar in bowl. Add eggs till combined. In separate bowl sift flower, soda, salt, and if wanted cinnamon. Combine flour mixture to sugar. While that is combining add lemon to milk and vanilla. Add Bananas till well combined (depending on how ripe the bananas are the browner the batter will be). 

Cover your pan in butter or cooking spray then add flour around edges so the cake can  easily come out of the pan when done baking (see picture below) Add in Batter and bake. If you are using a large loaf pan cover with tin foil to avoid burning top and edges. Regular oven 40-60 minutes  ( baking time differs from pan sizes). 25-30 Minutes for Muffins.

Oven Pancake

So Yummy, So Quick, So Easy!

Oven Pancake:

Prep Time 7 minutes bake time 15 minutes 

What you need:
Bowl and Whisk or a strong mixer like a Vitamix

In bowl or blender add:
3 eggs
1/2 Cup Whole Wheat Flour
1/2 Cup Milk of your choice (1%, Skim, Almond, Oat,etc.)
1 Tablespoon Plain Greek Yogurt (best texture but any plain yogurt will work)
1/2 Teaspoon Salt
1 Teaspoon vanilla extract

Mix till well combined then poor into pie pan and bake! It should take about 15 Minutes at 400 F

In the spring and summer I  like to add fresh honey or agave and fresh fruit to the top of my pancake!

In the Fall in winter I like to add apples (in season) 

Apple Oven Pancake:

2 Tablespoons Agave
3 Large apples, cored, and sliced
1 Teaspoon  Ground Cinnamon
1/2 Teaspoon Nutmeg

In a pan over medium heat bring Agave to a boil. Add apples. Constantly stirring until apples are slightly soft. Then add the remaining ingredients till well combined. poor into pie pan then poor pancake mixture (above) over top and bake just the same! May take about 5 minutes longer to bake

Take time to be silly, its healing. Take time to laugh, it will add years to your life. Take time to act like a kid, you only live once.  We take so much time to work, to stress, to do school work, etc. You deserve to take a break, take time to have fun! Do something silly!!! You do not want to take years off you life by being over stressed and over worked. You definitely do not want to look back at your life and see times that you did not spend goofing around, laughing, and having fun! LIVE, LIVE NOW!

This is me... We have been working a lot with our catering company Berrilicious. My husband and I have always been silly people. I am lucky enough to have someone that  keeps me laughing and encourages me to act like a kid every once in awhile! This is at my in laws condo and yes I took the time to surf down the hall ways! It was Classic. We laughed, I got a work out, I eliminated stress, and we made a great memory!

Some thing as little as this can do a whole lot! Live, Laugh, and be Silly!! Find something to do like roll down a hill, jump on a trampoline, or do a cannon ball at the pool. I encourage you do to something like that "like a kid" once a week or even a month! I promise it will be very healing!
